Traditional Irish St. Patrick’s Day Recipes

Anyone can put some green food coloring in a dish and call it Irish, but you can do one better and make a traditional Irish dish this St. Patrick's Day. If you want to make a traditional Irish St. Patrick's Day feast for your friends and family, first decide on what "tradition" you want.

When we think of St. Patrick's Day food, the savory aroma of corned beef and cabbage comes immediately to mind. But this is an American tradition; you will find corned beef being served for St. Patty's Day in Ireland, but it is typically to cater to the non-Irish!

You are more likely to find juicy roast chicken, lamb, mutton, or fish on Irish tables. So a traditional Irish dish may actually be Irish - or it may be a dish that's Irish for the day.

Corned Beef and Cabbage

Corned Beef and Cabbage

This dish is Irish cuisine as interpreted by America. Whether or not it is traditional fare in Ireland, there is no doubt that it is delicious. For this recipe from AllRecipes, you will need:

  • Corned beef brisket with included spice packet (3 pounds typically yields 5 servings)
  • 10 small red potatoes
  • 5 carrots, peeled and cut
  • 1 head cabbage, cut into wedges

Add more or less meat and vegetables to suit the number of people you are feeding.

To make:

Place the corned beef and spice packet in a large pot and cover with water. Put the lid on the pot and bring the water to a boil. Reduce to simmer and cook for approximately 50 minutes per pound or until the meat is tender. Note - Don't add the vegetables during this time because they will become mushy and overcooked.

When the meat is tender, add the potatoes and carrots. Cook until almost tender, and then add the cabbage. Cook that for another 15 minutes or so. Take the corned beef out of the pot and let it cool. Put the vegetables in a serving dish and cover. You can also add some of the broth that resulted from cooking). Slice the meat across the grain and serve. This is a hearty, filling dish and a true meat-and-potatoes meal.

Try a crockpot version if you don't have time to cook. Put the ingredients in the crockpot in the morning, leave it on, and come home to a mouth-watering meal.

Irish Stew

This delicious traditional Irish stew is filling and perfect for chilly March nights. You will need:

  • 2 tbsp of butter
  • 2 lamb shoulders or legs, cubed
  • 1 onion, sliced
  • 3 cloves of garlic, chopped
  • 2 c of water or beef stock
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 6-8 medium potatoes, quartered
  • 3-4 carrots, cut
  • Spice sachet made with 1 tablespoon each of chopped garlic, parsley, and thyme, and a sprig of rosemary. You can find reusable sachet bags from vendors like Amazon.

To make:

Brown the lamb in a stock pot on medium heat. Take it slow to avoid burning the butter. Once browned, add the onion and garlic and saute for 5 minutes. Add the water or stock, and salt and pepper, cover, and cook for 15 minutes. After this, add the potatoes, carrots, (other vegetables are always welcome), and the spice sachet you've made. Allow this to simmer on medium-low heat for about 45 minutes.

If you want to thicken the gravy, you can add a little cornstarch, flour, or Wondra powder.

Colcannon is a potato dish that makes an excellent side to a savory meat dish. You will need:

  • 2 pounds of shredded cabbage
  • 2 c water
  • 2 c milk
  • 4 pounds potatoes, peeled and quartered
  • 1 c chopped green onions
  • Salt and pepper to taste
  • 1/4 Cup butter, melted
  • Crumbled cooked bacon
  • Minced fresh parsley

To make:

Place cabbage and water in a large saucepan - bring to a boil . Reduce the heat to simmer and cover until the cabbage is tender (about 10 to 12 minutes). Drain and save the cooking liquid. Keep the cabbage warm by putting in a covered dish.

Next, place the cooking liquid and potatoes in a large saucepan and add enough water to cover. Bring it to a boil and then reduce the heat and cover. Cook until the potatoes are tender (about 15 to 17 minutes). Once tender, drain the potatoes and cover to keep them warm.

Bring the milk and onions to a boil in a small saucepan. Remove them from heat. Mash potatoes in a big bowl and add the milk and onion mixture. Beat well, and then beat in the cabbage, salt, and pepper. Drizzle this mixture with butter and sprinkle bacon and parsley over it. Delicious, filling, and hearty: perfect for St. Patrick's Day.

Follow Up with Something Sweet!

Every great dinner is followed up by something sweet! If you still have cooking adventure left in you, you can whip up a traditional St. Patrick's Day dessert like Bread Pudding. Or you can go a little less traditional and more festive with an Irish Creme Cheesecake or St. Patrick Cookies.

  • 1 (1.5 fluid ounce) jigger Irish cream liqueur
  • 1 (1.5 fluid ounce) jigger Irish whiskey
  • 1 cup hot brewed coffee
  • 1 tablespoon whipped cream
  • 1 dash ground nutmeg

In a large mug, combine the Irish cream and Irish whiskey. Fill mug with coffee then top with a dab of whipped cream and a dash of nutmeg.
